Baking therapy !

Now that Iam away from serious dancing for almost 2 years(read becoming mother :) ), I turned towards another creative outlet - Baking !
Yes its therapeutic ! Also helps me add variety to little Ra's snacks !

This post is mainly to document my experiment so I can repeat it later ! Not a professional food blog ! BTW keep my SIL's litebite.in always handy when you run out of ideas !

Here is my humble invention - healthy spicy 'onion' muffin !

1 cup All purpose flour
1/2 Cup Ragi flour
1/2 cup quick cooking oats
1/4 cup flaxseed powder
1 tsp baking powder
1/2 tsp baking soda
salt to taste

Wet ingredients :
1/4 cup oil
1 cup yogurt
3/4 cup milk
Whisk above 3 well in hand blender

Masala ingredients :
2 onions - finely chopped
3 green chillies , coarsely grind
1 tsp cumin seeds
curry leaves , chopped
Fry above with 2 spoons of oil till onion turns pink

Add dry , wet and masala ingredients in order and mix well.
Grease muffin tray and pour batter.
Preheat oven to 200 C and bake for 15 mins in 200 C

Spicy onion muffin is ready ! Good alternative to otherwise sweet breakfast muffins !
Baker in me is out ! Though I will get back to my love of my life 'Dance' soon !

Who would have thought onions would find their way into a muffin... interesting! So the Abudhabi air is doing your cookery skills good eh :-)
